I grew up in Bassano del Grappa in Northern Italy. But, my lovely husband was Sicilian, and his mom taught me how to cook. She cooked the best kinds of pasta, cakes, bread, meats, and vegetables with the finest ingredients and her secret family recipes. One of my favorite pasta dishes she made was her Pasta Alla Norma, topped with grated ricotta salata.

The name Pasta Alla Norma is said to originate from the apocryphal exclamation by the Italian writer, Nino Martoglio, who upon tasting the dish exclaimed, "This is a real 'Norma!" comparing it with the exceptional perfection of the Vincenzo Bellini Opera, Norma.

I'm happy to show you my recipe and share with you my little secret to make this pasta a Real Norma!!

INGREDIENTS:

Tomatoes (P.S. The secret is to pick the best tomatoes, like San Marzano or Piennolo, for better taste!)

1/4 Onion

3 Garlic Cloves

Ricotta Salata, Shredded

Basil

Salt to taste

1 Eggplant

Olive Oil

1lb of Rigatoni Pasta
